Very much so approved, It really doesn't make a huge difference but taking out one stick of RAM would be something I would do. Reason for that is, with 16gb your not in a multiple of three, thus making it run in double data rate 2 instead of DDR3 like its designed to. Other than that, I love the setup. I'm on the 2600K as well, OC'ed to 4.81Ghz on air, so if you ever feel like it, you know it will OC quite well. I also would have gone for at least an 850w PSU as well.

From what I know it's due to the Core i7 architecture and not due to it being DDR3. Core I7 has triple channel I believe.And it's not the memory ammount that needs to be multiple of 3, but the number of memory sticks used. Though it's not recommended using sticks of varying capacities, so the ammount of RAM tends to be multiple of 3 as a consequence.

Is overclocking dangerous, heat wise? I replacing a comp that baked its graphic card... so I'm very wary.
Not sure how I got that mixed up lol. Although what I said still is valid according to that since its 4x4 for 16gb and 4x3 is 12gb which is what I use for DDR3 even though I can use 16gb so.
Don't overclock anything you can't afford to replace.
You said budget was $1800 right? As much as I hate to recommend it... you can get an Alienware Aurora with roughly the same specs of that build for ~$1600.
